Am I wrong to think it should be "type" when I hear/read "Web Typography"?
Or even when others refer to Typography when it comes to the typefaces on a site?

Do you have an example of this “wrong use”? Typography IS choosing and using fonts, so there is nothing wrong with talking about web typography, as long as typography and type are not used as synonyms.
Or “we had a typographer design a custom font for us”.

So essentially a Typographer is a person who chooses typefaces? If that were the case, isn't everyone a "Typographer"? At least anyone who goes into Microsoft Word and chooses a typeface.
Technically in today's computer world, yes. Of course you could always consider anyone who owns a pipe wrench to be a professional plumber too.
